WINEMAKING
The key to making a great Moscato is to capture the natural fruity aromas
and vibrant flavors of the varietal. The grapes were harvested between 24
and 25 brix and were fermented between 50 to 55 degrees Fahrenheit over
a period of 20 days in state-of-the-art concrete tanks. Unlike many
Moscatos, SIP has no added residual sugar, but instead gains a touch of
natural sweetness through arrested fermentation. We halt the fermentation
by lowering the temperature once the target residual sugar is achieved.
This also allows us to preserve the fruit flavors that are characteristic of this
variety. The result is a delightfully refreshing, clean and crisp wine.
TASTING NOTES
Our 2022 Moscato may have a new bottle design, but the flavor profile stays close to the familiar one that our customers love. With just enough
sweetness and refined bubbles, it’s sure to please. The palate doesn’t
stray far from it aromatic impression, bringing more apricot and peach flavor
along with a sweet citrus that lingers on the finish. With remarkable
balance and bright acidity this wine is perfect with spicy Thai cuisine, sweet
cheese dishes, tangy BBQ, sushi, fruity desserts, and warm summer days.
